Converting 12V battery voltage to 120V AC power discharges batteries it does not change a battery. You can store some food and beverages in a 12V DC freezer.
While it is technically safe to leave your inverter on for as long as you like while its being monitored its better to turn it off when its not directly in use.
If the car or truck battery is utilized for an extended period it is possible that the battery voltage may be drained to the point where the battery has insufficient reserve power to start the vehicle. You are going to have a very cold night because you do not have enough power to run the heater or start the generator. Its better to just turn it on when you need it. Turning off your inverter when not in use can save on significant amounts of wear and tear of the device and can extend its life longer than if you left it on continuously.
